Enjoy easy and delicious Baked Chicken in Orange Sauce* and Holiday Chunky Apple Cake* at your Rosh Hashanah dinner. Eating, baking or cooking with apples and honey is a popular food custom on Rosh Hashanah, as it symbolizes the hope for a sweet new year.
Holiday Chunky Apple Cake
4 cups apples, cored, peeled and diced
2 cups sugar
1 tablespoon honey
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup vegetable oil
2 large eggs, beaten
2 teaspoons vanilla extract
1 cup finely chopped walnuts
Preheat oven to 350°F about ten minutes before baking. Grease 9×13-inch pan.
Mix together apples and sugar and set aside at room temperature for 1 hour. Combine flour, baking soda and salt in large bowl. Combine oil, eggs, honey and vanilla and add to flour mixture. Fold in apple mixture and nuts.
Pour batter into prepared pan and bake 50-60 minutes or until tester in center comes out clean.
Baked Chicken in Orange Sauce
6 chicken breast halves, boned and skinned
Salt and pepper to taste
½ cup flour, for dredging
½ cup olive oil, divided
1 medium onion, chopped
1 pound fresh mushrooms, sliced
½ cup chicken broth
½ cup wine, red or white
6 ounces frozen orange juice, undiluted
1 tablespoon honey
½ teaspoon dried oregano
½ teaspoon garlic powder
Preheat oven to 350°F. Grease 9×13-inch baking pan.
Season chicken with salt and pepper to taste and dredge in flour. Heat ¼ cup olive oil in large skillet and brown chicken. Arrange in baking pan.
Sauté onions and mushrooms in remaining oil in same skillet. Add broth, wine, orange juice and honey. Simmer until sauce is smooth.
Pour sauce over chicken and sprinkle with oregano and garlic powder. Bake 1 hour or until tender and cooked through.
